Recipes from Janine's Kitchen ~ August 2006 Recipe

Wow, this has been a great summer, hasn't it? I've been enjoying new salads in my diet and thought I'd share this one from the Epicurious website. It sounds weird but it tastes great if you like feta cheese & watermelon. I did modify it for my taste but I'll tell you where.

Watermelon & Feta Cheese Salad
Difficulty: Easy

1 tbsp lemon juice & red wine vinegar
2 tbsp olive oil
pinch of salt (if you want)
3 cups cubed watermelon that has been seeded and let sit in a colander to drain for about an hour (or you dressing will be watered down!)
3-4 cups of arugula (original used 6 cups.. I used my eye to see what colours looked good in the bowl. Also if you find arugula too peppery, you can also mix some baby spinach with the arugula.)
1/2 cup of pine nuts or slivered almonds or sliced almonds (original 1/4 cup pine nuts)
1/2 cup of feta cheese broken into chunks (original used 1/3 cup and crumbled it)

Mix lemon juice, vinegar & oil together for the dressing.
When ready to serve, take a large bowl and add drained watermelon, arugula, nuts & cheese.
Pour dressing over top and serve!
(Optional: sprinkle some black pepper to taste)
