Tasty Treats for Yogis ~ August 2004 Recipe

Tofu Vegetable Dip
Makes about 1 1/2 cups

1/2 pound regular tofu
2 tbs tahini
1 tbs sweet white miso
2 tsp tamari (or to taste)
1/2 cup shredded carrot
1/4 cup sliced scallions


1. Stream or simmer the tofu in water for 10 minutes. Cool.
2. Crumble the tofu and place in a food processor fitted with a metal blade. Add the tahini, miso, and tamari and process into a thick paste. Add the carrot and scalions and pulse until they are evenly distributed.Transfer to a storage container and chill several hours before serving.
