Tasty Treats for Yogis ~ February 2004 Recipe

Quinoa Fig Salad

2 cups of quinoa – available at any health food store
(for best results soak for 6-8 hours before cooking)
4 cups of water
8 figs
1/2 red pepper
1/2 small red onion
1/2 English cucumber
olive oil
old fashioned mustard
apple cider vinegar

Place the quinoa into the water and bring to a boil, reduce to simmer for 20 minutes or until water is absorbed. Finely chop the figs, red pepper, onion and cucumber.
Put quinoa into a bowl and let cool, once cool, add the chopped veggies and fruit.
Add olive oil, apple cider vinegar and mustard to taste!
