Tasty Treats for Yogis ~ February 2005 Recipe

Pumpkin Veloute* with Tofu
Serves 4

2 tbs sunflower oil
½ cup thinly slices white of leek
4 c vegetable broth
1 c pumpkin cut into cubes
1tbs garlic
1 tsp grated ginger
½ c silken tofu
sea salt and pepper to taste
1 tbsp chervil

Brown the leeks in oil.
Add the broth and the pumpkin.
Bring to a boil and simmer 30 minutes.
Add garlic ginger and the tofu. Simmer 15 minutes.
Mix in a blender.
Adjust seasonings to taste and the chervil and serve.

*"Veloute" - White sauce is made with stock instead of milk
