Pumpkin Palooza
Pumpkin Pie     Pumpkin Apricot Bread     Pumpkin Marmalade

Pumpkin Pie

1 9-inch pie crust
1 cup pumpkin
3/4 cup grated coconut
1/2 cup sugar
1/2 tsp ground cinnamon
1/4 tsp allspice
Pinch of nutmeg to taste
2 tbs butter, melted
1/2 tsp vanilla extract
2 eggs lightly beaten
1 cup milk, heated
1 cup whipped cream

Preheat oven to 350F. (190C)
Line a pie pan with crust. Set aside.
In a bowl mix pumpkin, grated coconut, sugar and spices.
In a second bowl, mix butter, vanilla extract, eggs and milk. Fold into pumpkin mixture.

Pour into crust. Bake in oven 40-50 minutes.

Let cool and add whipped cream.


Pumpkin Apricot Bread


2 cups flour (spelt or a combination of flours)
1 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
1/4 tsp cinnamon, ground
1/4 tsp coriander, ground
1/4 tsp ginger, ground
1/4 tsp cardamom, ground
3/4 cup barley malt syrup
1/2 tsp stevia
1/2 cup apricots, coarsely chopped
2 cups pumpkin puree
1 tbs Egg Replacer, dissolved into 4 tbs water
1/3 cup orange juice
1 tbs orange zest, grated

Preheat oven to 350F. (190C)
Lightly grease and flour a loaf pan.
Combine dry ingredients and apricots in a large bowl. Mix thoroughly.
Whisk together wet ingredients in another bowl. Stir into dry ingredients until liquid is absorbed.
Transfer batter to loaf pan.
Bake for 55-60 minutes, or until a toothpick inserted in center comes out clean. If it browns too quickly in oven, cover it halfway through baking.


Pumpkin Marmalade

3 unpeeled oranges, sectioned
1 unpeeled lemon, sectioned
2 cups sugar
3 cups pumpkin flesh, seeded

In a food processor, chop citrus fruit. Set aside.
In a large saucepan, bring to a boil the sugar and pumpkin. Add citrus fruit.
Over moderate heat, stirring often, cook uncovered 45-50 minutes until mixture thickens.
