Recipes from Orlando's Living Kitchen ~ January 2010 Recipe

Oatmeal Cacao Raisin Cookies

1 cup raw oats
1/2 cup firmly packed and pitted Medjool Dates (soft ones)
1 tsp cinnamon
1/2 cup raisins
1/2 tsp of vanilla (liquid)
2 tbsp of Cacao Nibs (optional)
pinch of celtic salt

Place oats and cinnamon in a food processor and process into small pieces. Add dates, vanilla and salt and process to mix well.

Remove into a bowl and mix in raisins and cacao nibs till you feel it is ready. Feel free to get in there with your hands because this can be as fun as eating the cookies.

You can shape your cookies into any shape that you like. You can use cookie cutters or just make the shapes with your hands and then place on a cookie tray.

Place in refrigerator and they will last for weeks. You can freeze then as well but allow for about 15 minutes to thaw before eating every last one of them.
