Oat Bran Oatmeal Muffins - Vegan Sugar-Free
Difficulty - easy ~ Makes about 15 muffins

This great recipe is new to my collection I don't know where I clipped it from. I wasn't totally keen on the texture of the muffins so add oatmeal and more cinnamon. They are NOT very sweet so if you like things a bit sweeter I would recommend you add 1/4-1/2 cup of sugar. My husband thought they were sweet enough but I wanted them a bit sweeter!!! I'll let you know where else you can play with the recipe more to fine tune it to your liking.

3 large apples peeled and chopped (about 3 cups..if you like less apples just use 2)
1 cup whole wheat pastry flour
1 cup oatmeal flaked (try not to use instant, its just more processed and less nutritious)
1 cup unbleached white flour
1 cup oat bran
(NB: total amount of dry is 4 cups. Play around if you like don't like oatmeal or oat bran ..add more flour, wheat germ, spelt flour)
2 1/2 tsp baking soda
2 tsp cinnamon or less
1/2 tsp nutmeg
1 12oz of apple juice concentrate thawed
3 tbsp applesauce (if you don't have you can skip this)
1 cup water ..less depending on batter, could also add apple juice
1/2 tsp salt
2 tsp cider vinegar

1. Heat oven 325 F. Lightly oil muffin tin.
2. Pour a bit of the apple juice concentrate onto the oatmeal and let sit for a few minutes to soften.
3. Mix the rest of the dry ingredients together. Then add softened oatmeal to the dry ingredients. (if you are adding sugar, do it here. If you want to stick to a vegan recipe add any organic sugar you like)
4. Add apples to the dry mixture to coat (keeps them from sinking). Mix it well because once you add the liquid you don't want to stir it a lot otherwise you will have a less tender muffin. Then add the apple juice concentrate mixed with the vinegar. If its still dry, add the applesauce or add some water until batter forms. Fill muffin tins
5. Bake for 25-30 minutes.
