Yummy…definitely worth making again. Just need some sweet potatoes and greens and it would be a really good meal.
– Rice Dish (from Rice & Risotto Mini Book)
1. Bring pot of water to boil and add lentils and simmer over med-low heat until tender, about 25 minutes. Drain and can use water for rice if desired, instead of stock.
2. Heat oil in pan over medium heat and fry onions until soft about 5-6 minutes. Remove 2/3 of the onions and keep frying the rest until brown and crispy.
Add rice to pan and stir for 2 minutes to toast rice. Add the less cooked
onions, stock and lentils, spices, salt and pepper to taste, and bring
to a boil and simmer for 20 minutes until done. Serve with lemon wedges,
yogurt, scallions on top and put crispy onions on top.
