Recipes from Janine's Kitchen ~ March 2007 Recipe

Yummy…definitely worth making again. Just need some sweet potatoes and greens and it would be a really good meal.

Mujadarah – Rice Dish (from Rice & Risotto Mini Book)

1 cup green or brown lentils rinsed
1/2 cup olive oil
3 large onions sliced thinly (you need a tool to slice onions thin enough)
1 cup basmati rice
3 cups stock
1 tsp allspice or cinnamon (I used 1/2 & 1/2 plus 1/8 tsp of cumin)
1 tsp salt

1. Bring pot of water to boil and add lentils and simmer over med-low heat until tender, about 25 minutes. Drain and can use water for rice if desired, instead of stock.

2. Heat oil in pan over medium heat and fry onions until soft about 5-6 minutes. Remove 2/3 of the onions and keep frying the rest until brown and crispy.

3. Add rice to pan and stir for 2 minutes to toast rice. Add the less cooked onions, stock and lentils, spices, salt and pepper to taste, and bring to a boil and simmer for 20 minutes until done. Serve with lemon wedges, yogurt, scallions on top and put crispy onions on top.
