Recipes from Janine's Kitchen ~ May 2006 Recipes

Hi all,
For this month, I thought I'd do some old-fashioned granola. It's great camping and cottage food and we can support our Maple Syrup Producers. Did you know that consumption of maple syrup has decreased to the point that we have a surplus of it? G&M article in the last few months informed me of this. So let's keep the natural taste of maple syrup in our diets.

Maple Nut Granola (from Moosewood Restaurant New Classics)

2 1/2-3 cups of rolled oats (4 cups if you want it less sweet)
1/4 cup oat bran (I've used wheat bran or wheat germ)
1/2 cup sunflower seeds
1/4 cup sesame seeds (I've used hemp seeds)
2 tsp cinnamon

Toss in a mixture of nuts until it looks like a good amount to your liking. The recipe itself called for 1/2 cup sliced almonds, 1/4 cup of cashews, brazil nuts & walnuts. Also consider about what dried fruit you want to add when deciding on the nuts e.g. apples & walnuts, almonds & apricots & raisins.

1/3 cup vegetable oil
1/2 cup + a splash of maple syrup
2 tbsp of barley malt syrup (get buy at health food store) or use molasses
Dried fruit (apples, apricots, cranberries, raisins) (Optional of course)

1. Preheat oven to 350F. Oil a baking pan.
2. In a bowl, put all the dry ingredients together except fruit. Whisk together in a small bowl/measuring cup the wet ingredients.
3. Stir wet into dry and coat evenly and pour onto prepared pan.
4. Bake 15-20 minutes, stirring at 5 minute intervals for even baking. When golden, remove from the oven.
5. Scrap granola into large bowl to cool. I do this because I find it sticks to the pan if you let it cool there and then you get granola all over your kitchen floor! After it cools, break up the granola with a wooden spoon. Add diced up fruit in a quantity that looks good. (EEG. 1/2-1cup) Store in a air tight container.

Excellent with yogurt or as your cereal!!! Enjoy!
