Recipes from Orlando's Living Kitchen ~ March 2010 Recipe

Mango Salad

4 ripe mangos, peeled and cubed

1/2 head Romaine or leaf lettuce

1/2 bunch cilantro, chopped

1 sweet red bell pepper, diced

2 leaves of rinsed dulse, chopped or 2 tbsp of soaked arame, chopped

1 lemon, juiced

Optional: 2 scallions, chopped

1. Wash and tear the lettuce and place in a salad bowl.
2. Add half of the mango cubes, bell pepper, dulse and cilantro (and scallions if desired).

Dressing

Blend remaining mango cubes with lemon juice in a blender and pour over salad as dressing. You can do a great deal with this recipe. There is no such thing as a recipe that is written in stone. Try using different herbs each time for a different experience (don't be shy).
