Recipes from Orlando's Super Food Kitchen ~ June 2010 Recipe

Enjoy raw spinach in one of the simplest forms, in this easy to prepare soup.

Live Spinach Energy Soup
Serves 2 to 4

½ bunch fresh spinach
2 stalks celery
1 green onion
¼ bunch fresh parsley
1 clove garlic
½ inch fresh ginger
1 grated carrot
Water to cover.

Optional:

½ tsp Wheat-free Tamari (or to taste)
Or Nama Shoyu or Soya Sauce if desperate
Or replace with sea salt for those who do not have either or dislike fermented soy products.

1. Wash spinach very well. Blend all ingredients, except carrot, until smooth consistency. Be careful not to blend to much because the spinach will cause the soup to become a bit foamy.

2. Add carrot and serve.

This soup may also be refrigerated and served cool on a hot summer’s day.
