Tasty Treats for Yogis ~ January 2004 Recipe

Cynthia's Lentil Stew

1 1/2 cups of dried lentils (I prefer the green lentils not the orange)
6 cups of water

1 1/2 cups of chopped sun dried tomatoes (or to what seems right to your eye)
1/2 cups of dries apricots (or to what seems right to your eye)
1/4 teaspoon of cinnamon (or to taste)
1/4 teaspoon of cayenne
1 tablespoon of paprika
1 1/2 tablespoons of salt

Rinse the lentils, and then bring the to a boil and simmer covered for 20 minutes. Add the apricots and sun dried tomatoes and the spices and cover for another 20 minutes. Taste and if you need to add more spices please feel free to do so!

Excellent with toast and sharp "nippy old" cheese!
