Recipes from Janine's Kitchen ~ April 2006 Recipes

I've finally started to make some of the recipes that my readers are sending me. I've got 2 to share with you this month! Thanks! Here's a great one to fill your sweet tooth and keep your energy up.

This recipe was submitted by Susana Molinolo. I've modifed it and will give you as many variations as I can since I've made it 3x in my test kitchen for you.

RECIPE I: Hemp Energy Cookies - My Version
Difficulty: easy
Prep time: 10 minutes. Baking time: 30 minutes

1 cup oil
1 cup maple syrup
2 1/2 cups oats
1 tsp baking powder
1/3 cup each sunflower seeds, sesame seeds
3 scoops of Hemp Protein Powder (each scoop 15grams)
1/2 cup barley flour
1 1/4 cup ground almonds
1/2 cup cranberries or chocolate chips or other dried fruit

1. Preheat oven 350F.
2. Mix oil & syrup
3. Combine with dry ingredients. Mix wet into dry. Then let the mixture rest for a minute or so. If you see oil separating from the mixture, then you need to add a bit more almonds or barley flour to thicken it.
4. Using a teaspoon drop onto greased cookie sheets. It will flatten a bit since it has enough oil in the dough that it will spread on its own.
5. Bake for 12-15 minutes until edges are brown and bottoms should be at least light brown. Cookies will be crisp in texture.

NB: I was going to try to make this recipe with 3/4 cup of oil and see if it worked okay but I haven't had time to make it that way to see how the results are.

Variations

Original recipe using my version as the base:

• Omit barley flour & ground almonds.
• Use cane sugar as the sweetener.
• Only use 2 scoops of hemp protein powder. Add a bit of water or favourite liquid (coconut was suggested) to make the dough stick together. Bake as usual. This cookie will be more crumbly but still tasty.

NB: Honey was also suggested and I didn't enjoy it that much but feel free to try it if you're a honey fan. I found I had to add some barley & almond meal to make the batter hold together.
