Tasty Treats for Yogis ~ June 2005 Recipe

Gazpacho

From the kitchen of Janine Woo

4 cups tomatoes
1 cucumber
1 red pepper
dill
garlic
scallions
Sliced mushrooms
1 cup yogurt

Blend tomatoes, cucumber, and red pepper in a food processor. Add dill and garlic to taste.
Place a dollop of yogurt, scallions and sliced mushrooms on top as garnish.
