Chocolate Cake - 6 Minute

Hi all,
I thought all things sweet and chocolate would be nice for Valentine's. So here's a recipe for an easy single layer chocolate cake.

It's originally from House & Garden 1976 but I found it in the Moosewood Restaurant: Cooks at Home and New Classics. (both books) The former acknowledges they were pleasantly surprised that the cake was, indeed, economical, low-cholesterol and delicious! The latter has renamed the recipe as a Vegan chocolate cake. No matter, its just easy and yummy! So here goes.

If you plan on serving it right out of the pan, you can mix the dry ingredients right into a 9" round baking pan. I usually use a 8" square so I mix in a bowl because mixing in those corners is not easy!

1 1/2 cups unbleached flour
1/3 cup cocoa powder ( I always use Dutch processed but use your favourite)
1/2 -1 tsp baking soda
1/4 -1/2 tsp salt
1 cup sugar
1/2 cup oil (vegetable, safflower, canola, sunflower etc, your choice)
1 cup water OR coffee
2 tsp vanilla extract
2 tbsp cider vinegar

1. Preheat oven to 375°F.
2. Sift flour, cocoa, baking soda, salt & sugar into pan OR mixing bowl.
3. In a 2 cup measuring cup, mix oil and water/coffee and vanilla.
4. Mix wet ingrdients with fork or small whisk.
5. Pour wet into dry and mix until smooth.
6. Add vinegar and you should see pale swirls in the batter where the baking soda and vinegar are reacting. Quickly stir until just blended.
7. If using bowl, pour into prepared pan.
8. Bake for 25-30 minutes until set.
