Cauliflower
& Kale Soup

This beauty is from Canyon Ranch which is a resort in the U.S that specializes
in healthy eating. Clients are on a program of exercise, eduation on
their health and I think they even get a physical there (but don't quote
me on that one. :) Their cooks work with a nutritionist to create tasty
and healthy dishes. This is easy to make as long as you have a blender
or hand held blender.
1/2 cup diced onions
1 tbsp minced garlic
1 1/2 tsp olive oil
1/2 cup white wine ( I used red because I ran out of white and it still
tasted great)
1 regular size caulflower chopped into pieces (if you have one of those
massive ones from the fall harvest use about 3/4 or it)
3 1/2 cups of vegetable stock ( I used 1 bouillon cube with 3.5 cups
of water for ease)
1 cup of kale thinly sliced & lightly packed
1/4 cup fresh tarragon (try adding 2tbsp first, taste it and use your
tastebuds to decide if you'd like more tarragon. The original recipe
only has 1 tsp for a whole caulflower, not enough for my tastebuds.)
Salt & pepper to taste (about 1 tsp salt)
1. Heat oil in pot and add onions and garlic. Cook until translucent.
2. Add wine and cook until wine is reduced in half. (just guess, I did)
3. Boil some water and measure out 3.5 cups and add the bouillon to
help dissolve it faster if you're not using stock.
4. Add cauliflower and stock to the pot and bring to a boil. Reduce
heat to medium-low and cook for about 20 minutes until caulflower is
soft (not mushy). Poke with a fork and it should go through easily but
not fall apart. If you're worried check at 15minutes.
5. Add kale and cook another 5 minutes on low heat. Remove from heat
then blend/puree.
5. Add salt and pepper to taste and chopped up tarragon.
Sprinkle with extra tarrogon when serving if you like.
