Recipes from Leslie's Kitchen ~ November 2010 Recipe

So I got to eat one of these warm from the oven the other day and they are awesome! I like that Leslie uses almond and coconut flour in this!!!! ~ Cynthia

Banana Muffins

2 cups almond flour (also goes by ground almonds in bulk food stores)
3/4 cups coconut flour (good idea to sift it to avoid lumps)
3 eggs, beaten
1/4 cup melted butter
1/2 - 2/3 cup honey
1 tsp baking soda (aluminum free if possible)
3 mashed bananas (should be very ripe)

1. Mash bananas and then add eggs, and honey. Combine flours and baking soda and then add to wet mixture. Once ingredients are blended well add melted butter. I like them plain but you could also add raisins or other dried fruit or nuts. For a treat you can add chocolate chips or carob chips.

2.Bake at 350 F° for approximately 20 minutes. If you decide to make a loaf instead you will need about 40 minutes. Use a cupcake liners or a well greased pan.
