Recipes from Janine's Kitchen ~ June 2006 Recipes

I thought I'd go local and look up what is fresh in June and 2 things came up, strawberries & asparagus.

Nothing says summer is here for me than local strawberries, sweeter & more delicate than the California types. And think of how you are helping the environment by buying local!

Asparagus Salad with Greens (serves 2)
This simple recipe was given to me by my TCM friend, Jeanette. Simple and quick.
Great for a light dinner or lunch.

1 bunch local asparagus
1 bunch lettuce (your favourite)
1 lemon

Cut asparagus into pieces and steam.
Squeeze some lemon juice about a 1/4 of one.
Wash lettuce and tear into bowl and place asparagus on top of lettuce.
Drizzle generously with dressing.

Dressing
These proportions were never measured so I will guess at them but please taste to your liking!

1-2 tbsp maple syrup
1 heaping tsp whole grain dijon mustard (doesn't have to be dijon but it must be whole seed)
1 tsp soy or tamari
1/2 cup olive oil
1/3 - 1/2 cup vinegar (I've used apple cider, Jeanette uses organic white vinegar)
salt & pepper to taste

Mix well in a jar or whisk in a bowl and taste and adjust seasonings to your liking. Then pour generously over salad. Enjoy!
