Tasty Treats for Yogis ~ March 2005 Recipe

Apricot Almond Bread
Makes 1 loaf - 1 hour and 15 minutes baking time @ 350°F

1 1/2 C dried apricots
1 1/2 C water
2 tbsp soft butter
1/2 C honey or maple syrup
1 tsp salt
1 1/2 C white flour
1 C whole wheat flour
1 tsp baking soda
2 tsp baking powder
1 C chopped almonds
1 beaten egg
1 tsp vanilla
1/2 tsp grated fresh orange rind

Cook apricots in water for 10 minutes (covered low heat). Cool completely and add butter, syrup and salt. Beat in egg and vanilla. Sift together dry ingredients. Fold everything together and spread into buttered loaf pan. Bake and remove from pan 10 minutes after it comes out of the oven.
