Recipes from Janine's Kitchen ~ March 2007 Recipes

Hi all,
I have been in a baking and smoothie mood these days. However, I thought I'd share a favourite baking recipe since apples are still in season in Ontario. This recipe was originally printed in the L.A. Times. I usually double the recipe and bake it in an bundt pan for presentation purposes.

Apple Cake (Low Fat)
Difficulty: Easy

Preheat oven to 350F. Spray 8 inch square pan with vegetable oil.

2 cups flour
2 apples, peeled and diced up
1 cup sugar (original has 1 1/4 cups but I find that too sweet now)
1 1/2 tsp cinnamon
1 1/4 tsp baking soda
1/2 tsp salt
1/4 tsp cloves
1/4 tsp nutmeg
2 eggs
1 tsp vanilla
1/2 cup applesauce
1/3 cup apple juice or cider

1. Sift flour, sugar, cinnamon, baking soda, salt, cloves, nutmeg into a mixing bowl.

2. Mix eggs, vanilla, applesauce, juice and mix wet ingredients into dry ingredients. Fold in apples and pour into prepared pan. If the batter seems too dry, I have been known to add an extra tablespoon of apple sauce or pour a bit more apple juice into the batter. I like the cake moist. And I've been known to add extra apples to the batter.

3. Bake for 30-40 minutes until toothpick comes out clean. If baking in a bundt pan, bake for approximately 1 1/2 hours.
