Vegan Mashed Sweet Potatoes

4 medium sweet potatoes
almond milk
tahini
sea salt

1. Bake sweet potatoes, peel skin and put in blender.

2. Add almond milk, tahini and sea salt to desired sweetness and consistency.

3. Serve and enjoy!

Nonna's Tiramisu Recipe (not quite vegetarian!)

Semisweet chocolate (shavings)
4 eggs (yolks and whites separated)
1 container of mascarpone cheese (Tre Stelle is the best quality).
1/4 cup of sugar 2 cups espresso or very strong coffee, cooled 
(can be substituted with hot chocolate) 
(Optional) 1/3 cup coffee liqueur (traditional liqueur would be Tia Maria or Kahlua)
About 44 ladyfinger cookies (available at supermarkets and Italian bakeries)

This Pate has many uses. You can use it as a dip for celery or carrots or cucumbers etc. You can mix it further with chopped veggies like red peppers or olives and then wrap with a collard leaf or a sheet of Nori. I feel it is important to eat any kind of nut or seed Pate with a good mix of veggies due to the very high fat content in nuts and seeds. This will help greatly with digestion.

Hi all,
For this month, I thought I'd do some old-fashioned granola. It's great camping and cottage food and we can support our Maple Syrup Producers. Did you know that consumption of maple syrup has decreased to the point that we have a surplus of it? G&M article in the last few months informed me of this. So let's keep the natural taste of maple syrup in our diets.
